Soto ayam (chicken soto)

1 \N Chicken; whole wash & cut in 4 pieces
5 \N Cloves garlic
4 \N Stalk onion leaves cut into small pieces
½ teaspoon Ginger
½ teaspoon Turmeric
½ teaspoon Salt optional
1 teaspoon Pepper optional
5 \N Aleurites Moluccana
250 grams Potatoe chips
100 grams Soun (white noodles);boiled
200 grams Sprout; boiled
2 \N Stalk celery; chopped
\N \N Soya sauce
\N \N Lime; Citrus Aurantium
\N \N Shallot; fried
10 \N Capsicum Frustescens (very hot pepper);steamed
5 \N Capsicum Annum (red chillies);steamed
3 \N Aleurites Moluccana
\N \N Salt
\N \N Vinegar

1.Boil chicken with 1½ lt water, then leave the (broth) water aside. Fry chicken for a few minutes, then cut into small pieces. 2.Blend together garlic,ginger,turmeric,aleurites moluccana,pepper and salt. In a wok, heat the oil over high heat and when the oil begins to smoke put all the spices on it until they smell good. 3.Heat the (broth) water,add all the ingredients from number 2,stir. 4.Add the chicken into it.Wait until it hot and bubbly. 5.Put the onion leaves. Chiles: Crush all the ingredients.
