Ingredients

Buckwheat noodles
1cupDashi (fried fish broth)
¼cupSoy sauce
¼cupMirin (sweet cooking wine)
1pinchSalt
¼teaspoonWasabi (horseradish/green mustard)
Kizami-nori (seaweed), cut in thin strips
Green onion, sliced

Directions

Cook noodles in boiling water for about 5 minutes. Rinse in ice water; drain well. Combine with remaining ingredients, and garnish with kizami-nori and green onion. Serve cold.
