Smoky corn pancakes

Yield: 12 pancakes

Measure Ingredient
½ cup Boiling water
½ cup Cornmeal
½ cup Flour
⅓ cup Sugar
2 teaspoons Baking powder
1½ teaspoon Salt
2 tablespoons Butter; melted
2 cups Corn; cooked
2 \N Eggs
¼ cup Milk
¼ cup Salsa
¼ teaspoon Liquid smoke

In a large bowl, pour boiling water on the cornmeal and let stand for 10 minutes.

Add all the remaining ingredients and gently stir until well blended.

Make pancakes using ¼ cup of batter for each. Can be fried in oil or cooked in a nonstick pan.
