Slim & savory spinach potato soup

3mediumsLeeks white part only
Sliced OR
3mediumsOnions chopped
6ouncesSpinach trimmed and chopped
3cupsCubed potatoes
2tablespoonsAll natural sour cream and
Butter flavor sprinkle
Freshly ground black pepper

Directions

Bring broth, leeks and spinach to a simmer. Cover and cook 5 minutes. Add potatoes and cook, covered, 20 minutes, or until potatoes are tender. Puree half the mixture; return to saucepan. Stir in butter sprinkles and pepper. Serve hot or cold.
