Watercress or spinach and potato soup

3cupsChicken or meat stock
4mediumsPotatoes; grated
1cupMilk or cream
¾cupWashed chopped watercress or raw spinach
teaspoonSalt
1dashPepper
¼cupGrated cheese

Directions

Heat stock to boiling, add grated raw potato and SIMMER gently for 10 to 15 minutes, stirring occasionally. Just before serving, add milk, cress or spinach and seasonings. Serve hot with a sprinkling of grated cheese on each servings. 5 servings
