Shrimp & yellow rice

Ingredients

½cupOlive oil
2Garlic cloves
1Small onion
1Green pepper
1poundsRaw shrimp;peeled & deveined
¾cupTomatoes
1pinchSaffron
1tablespoonSalt
½teaspoonYellow food coloring
2cupsWater
1cupRice
½cupGreen peas; tiny
1canPimentos; small jar
1Parsley

Directions

Heat olive oil and saute the chopped garlic, onion, and green pepper. When half done, add the shrimp. When shrimp turn pink, add the tomatoes, saffron, salt, coloring and water. When mixture starts boiling, add 1 cup rice. Bake in oven at 350 deg. for 15 minutes.

Garnish with peas, pimiento and parsley leaves.
