Saucy stuffed chicken

Yield: 1 Servings

Measure Ingredient
2 cups Stuffing Mix
1 cup Boiling water
2 tablespoons Margarine
4 \N Boned, skinned chicken breasts, flattened for rolling
\N \N Some olive oil for cooking
1 \N Jar (12-oz) chicken gravy (or your own gravy)
1 can (15 1/4-oz) whole tomatoes, drained and chopped
½ teaspoon Dry thyme leaves -or-
1 teaspoon Fresh thyme
2 tablespoons Sweet vermouth (or apple juice)

Mix stuffing, water, and butter. Let stand 5 minutes. Place on chicken, roll and secure with wood picks.

Brown chicken in oil in a heavy skillet. Add gravy and remaining ingredients. Simmer covered for 30 minutes.
