Yield: 1 Servings
|2 cups||Stuffing Mix|
|1 cup||Boiling water|
|4||Boned, skinned chicken breasts, flattened for rolling|
|Some olive oil for cooking|
|1||Jar (12-oz) chicken gravy (or your own gravy)|
|1 can||(15 1/4-oz) whole tomatoes, drained and chopped|
|½ teaspoon||Dry thyme leaves -or-|
|1 teaspoon||Fresh thyme|
|2 tablespoons||Sweet vermouth (or apple juice)|
Mix stuffing, water, and butter. Let stand 5 minutes. Place on chicken, roll and secure with wood picks.
Brown chicken in oil in a heavy skillet. Add gravy and remaining ingredients. Simmer covered for 30 minutes.
