Saucy stuffed chicken

Ingredients

| 2 | cups | Stuffing Mix |
| 1 | cup | Boiling water |
| 2 | tablespoons | Margarine |
| 4 | Boned, skinned chicken breasts, flattened for rolling | |
| Some olive oil for cooking | ||
| 1 | Jar (12-oz) chicken gravy (or your own gravy) | |
| 1 | can | (15 1/4-oz) whole tomatoes, drained and chopped |
| ½ | teaspoon | Dry thyme leaves -or- |
| 1 | teaspoon | Fresh thyme |
| 2 | tablespoons | Sweet vermouth (or apple juice) |
Directions
Mix stuffing, water, and butter. Let stand 5 minutes. Place on chicken, roll and secure with wood picks.
Brown chicken in oil in a heavy skillet. Add gravy and remaining ingredients. Simmer covered for 30 minutes.
