Salmon salad with yogurt-sesame dressing

1⅓Green onion; chopped
1⅓Celery stalk; diced
1⅓cupBean sprouts
1tablespoonFresh cilantro; chopped
cupFresh mint leaves; chopped
cupOr fresh parsley
4Tomatoes
4Leaf lettuce leaves
1⅓tablespoonSesame seeds; toasted*
2⅔tablespoonYogurt
1⅓tablespoonMayonnaise
3teaspoonsSesame oil
3teaspoonsLemon juice

Directions

YOGURT SESAME DRESSING

*Toast sesame seeds in small skillet over high heat, stirring for 2 minutes or until golden.

Combine salmon, green onion, celery, bean sprouts, cilantro and mint or parsley. In small bowl, combine yogurt, mayonnaise, sesame oil and lemon juice; pour over salmon mixture and mix lightly.

Quarter tomatoes, cutting almost through; place on lettuce; lined plates; spoon salmon mixture in center. Sprinkle with sesame seeds.
