Rustic tuscan mussel stew

| 4 | Plum tomatoes | |
| 4 | Plum tomatoes; pureed | |
| 2 | Cloves garlic; chopped | |
| 1 | Red onion; chopped | |
| 100 | millilitres | White wine |
| 20 | Shelled mussels | |
| Chopped basil | ||
| Chopped coriander | ||
| 1 | ounce | Diced focaccia bread |
| Olive oil | ||
| Salt and pepper | ||
Directions
Sweat the onion and garlic in the oil. Add the wine, beans, all the tomatoes and the mussels. Bring to the boil then simmer for about 3 minutes. Add the basil, coriander and focaccia and season well.
Serve immediately, drizzled with olive oil.
