Roasted corn tortillas

Ingredients

4Ears grilled corn
2Poblano peppers; roasted
1Red pepper; roasted
2Tomatoes; chopped
¼cupCilantro; chopped
Juice of one lime
1tablespoonOlive oil
¼poundsCheese; grated
8Tortillas
Filling:
3Zucchini; sliced lengthwise
3Yellow squash; sliced lengthwise
3Roasted peppers; different colors,
Sliced
1Eggplant sliced
¼cupChopped basil

Directions

In large bowl combine all ingredients except cheese and tortillas. Place one tortilla on plate, layer salsa mixture, and cheese, top with another tortilla and top with salsa. Serve.
