Rigatoni with zucchini sauce

Yield: 4 servings

Measure Ingredient
8 ounces Rigatoni
3 tablespoons Olive oil
1 large Onion -- sliced
2 mediums Zucchini -- sliced & halved
3 cups Fresh tomatoes -- diced & peeled
½ teaspoon Salt
1 Bay leaf
¼ teaspoon Pepper
¼ teaspoon Oregano

In large skillet, saute onion in hot oil until tender. Add zucchini, tomatoes, bay leaf and seasonings. Simmer covered for 15 minutes; uncover and simmer for 10 minutes longer. Discard bay leaf.

Meanwhile, cook rigatoni as directed on package; drain. Serve rigatoni topped with zucchini sauce.
