Rigatoni with zucchini sauce

3tablespoonsOlive oil
1largeOnion -- sliced
2mediumsZucchini -- sliced & halved
3cupsFresh tomatoes -- diced & peeled
½teaspoonSalt
1Bay leaf
¼teaspoonPepper
¼teaspoonOregano

Directions

In large skillet, saute onion in hot oil until tender. Add zucchini, tomatoes, bay leaf and seasonings. Simmer covered for 15 minutes; uncover and simmer for 10 minutes longer. Discard bay leaf.

Meanwhile, cook rigatoni as directed on package; drain. Serve rigatoni topped with zucchini sauce.
