Rice with apricots

Yield: 1 Servings

Measure Ingredient
1 cup Cooked; brown rice
1 \N Fresh apricot chopped into 0.5 cm (1/4 inch) pieces
¼ cup Chopped fresh tomato or sweet; red pepper or a combination
⅛ teaspoon Lemon juice
1 \N Shake powdered cinnamon to taste
1 \N Micro shake powdered cayenne pepper (optional)
\N \N Salt to taste

Mix, wrap in foil and warm in 325 degree F oven or put in a container and warm in a Microwave oven. Do not 'cook', just warm.

Good as a main course, warm or cold or as a side dish with meat, fish, cheese, whatever.....
