Rice with apples and raisins - lf

Ingredients

1cupRice
1smallOnion; chopped
1mediumApple; peeled and cored and chopped
½cupGolden raisins
2teaspoonsConcentrated chicken stock; dissolved in
2cupsHot water
¾teaspoonCurry powder
Pepper; to taste

Directions

Saute onion in oil. Add rice and brown slightly. Add remaining ingredients in order listed. Bring toa boil. Cover and reduce heat to slow simmer. cook 15 minutes until rice is tender.
