Red wine plum stew with spiced ice cream

Ingredients

Quantity Ingredient
ounce Red plums
13½ ounce Red wine
ounce Raspberry puree
ounce Strawberry puree
ounce Sugar
¼ Vanilla bean
¼ Cinnamon stick
¼ Bay leaf
3 Peppercorns
4 ounces Water
¼ Orange zest
1 pint Fresh berries

Directions

Cook the berry purees, sugar, wine, water and spices together until it boils and then skim. Cook the juice until desired thickness (lightly syrupy). Add the plums to the cooking juice and poach. Let set overnight, well covered.
