Ravioli cheese filling

Measure Ingredient
½ pounds Ricotta cheese
8 ounces Room temperature cream
⅓ cup Finely grated Parmesan
2 Well beaten yolks
1 teaspoon Lemon zest
3 4 Tbls. minced fresh sweet
Basil leaves
Salt & pepper
dash Nutmeg

Combine the 3 cheeses in a bowl & cream with wooden spoon. Beat in yolks. Add zest & spices. Cover & refrigerate until ready to use.
