Quick thai beef salad with lime peanuts

Ingredients

500gramsBeef mince; (or chicken or pork)
1bunchFresh coriander
1bunchFresh mint
2Cloves garlic
12 cm piece fresh ginger peeled &; (2 to 3)

2teaspoonsBrown sugar
1tablespoonSoy sauce
2Fresh limes; (depending on size)
(2 to 4)
; , Juice of
1tablespoonFish sauce; (no matter what it
; smells like!)
1tablespoonSesame oil
1tablespoonSunflower or other mild tasting oil
1Iceberg lettuce washed and leaves
; separated
Chopped; roasted peanuts

Directions

Place everything except the beef and oil into a blender and whiz until smooth.

Add to the meat and mix well.

You can leave this mixture overnight if you wish to improve the flavour but it is almost as good immediately if you are in a hurry.

Place oil into a stainless steel frypan and heat to smoking hot.

Add mince in spoonfuls and cook through quickly.

Remove from heat and place in a bowl, garnish with fresh chopped coriander and roasted peanuts.

To serve, place a spoonful of the mince into a lettuce leaf, sprinkle with chopped peanuts, roll up and eat.
