Pork stew with chiles & peanuts

1 | pounds | Boneless pork top loin -- cut in 1/2\" cubes |

1 | medium | Onion -- diced |
2 | tablespoons | Garlic -- minced |
1 | tablespoon | Paprika |
1 | teaspoon | Chili pepper -- minced |
2 | teaspoons | Ground cumin |
2 | pounds | Potatoes -- peeled & diced |
½ | cup | Unsalted roasted peanuts -- chopped |
2 | quarts | Chicken stock or water |
1 | tablespoon | Sugar |
Lime quarters -- for garnish | ||
Cilantro leaves -- for garnish |
Directions
In large saute pan, heat the oil over medium high heat until hot but not smoking. Sprinkle the pork cubes with salt and pepper and brown on all sides, which should take 5 to 7 minutes. Remove and set aside. Drain all but 1 tbsp of fat, add the onion, and saute over medium heat, stirring occasionally, about 5 to 7 minutes. Add the garlic, paprika, pepper and cumin and cook, stirring for 1 additional minute. Add all the remaining ingredients except the limes and cilantro and bring just to a boil. Reduce the heat to a very low and simmer, stirring occasionally, for about 45 minutes, or until the pork is quite tender.
