Pork chops with peach brandy sauce

| ½ | Yellow onion | |
| 2 | Shallots | |
| 1 | Garlic clove | |
| 2 | tablespoons | Olive oil | 
| 3 | tablespoons | Apple juice | 
| Salt and pepper | ||
| 3 | tablespoons | Peach brandy | 
Directions
Season pork chops with salt and pepper. In bowl of food processor place chopped peaches, yellow onion, shallots and garlic. Pour in 1 tablespoon olive oil and apple juice. Season with salt and pepper and process until well blended. In large skillet, heat remaining 1 tablespoon oil over medium heat. Add peach-onion mixture and sliced peaches. Saute 2 minutes. Stir often. Remove all but about 2 tablespoons mixture from skillet. Turn heat up and add chops. Cover and cook about 10 minutes. Turn chops halfway through cooking time. Add peach-onion mixture back into pan with chops and add brandy. Simmer 2 minutes. Adjust seasoning if desired. 
Approximately 10-20 minutes.
