Pollo en salsa de pipian (chicken in pumpkin seed sauce)

| 1 | litre | Chicken stock |
| 125 | grams | Peanut butter |
| 225 | grams | Pumpkin seeds |
| 1 | cup | Corn chips; (nachos) |
| 8 | Skinned; boned chicken thigh | |

| Oil for cooking | ||
Directions
Place all ingredients except the chicken into a food blender and blend until smooth.
Place the oil into a saut pan. Heat and lightly brown the chicken thighs.
Add the blended ingredients and simmer for 15-20 minutes until creamy in consistency and the chicken is cooked (no pink juices).
Serve alongside stir fry vegetables, salsa and corn chips.
