Pollo en salsa de pipian (chicken in pumpkin seed sauce)

Measure Ingredient
3 \N Chillies; deseeded
2 \N Cloves garlic
1 litre Chicken stock
125 grams Peanut butter
225 grams Pumpkin seeds
1 cup Corn chips; (nachos)
8 \N Skinned; boned chicken thigh
\N \N ; fillets
\N \N Oil for cooking

Place all ingredients except the chicken into a food blender and blend until smooth.

Place the oil into a saut‚ pan. Heat and lightly brown the chicken thighs.

Add the blended ingredients and simmer for 15-20 minutes until creamy in consistency and the chicken is cooked (no pink juices).

Serve alongside stir fry vegetables, salsa and corn chips.
