Poached pears with ginger

Yield: 4 servings

Measure Ingredient
4 \N Comice or Naji pears; peeled, stalks left
\N \N ; on
½ pint White wine
3 \N Floz water
2 ounces Sugar
½ \N Lemon; rind of
\N \N Vanilla pod
1 \N 3/4 inch pie fresh ginger; chopped

Place all the ingredients in a saucepan, simmer until the pears are tender.

Serve hot or cold with a raspberry or apricot coulis.
