Poached pears with ginger

4Comice or Naji pears; peeled, stalks left

3Floz water
2ouncesSugar
½Lemon; rind of
Vanilla pod
13/4 inch pie fresh ginger; chopped

Directions

Place all the ingredients in a saucepan, simmer until the pears are tender.

Serve hot or cold with a raspberry or apricot coulis.
