Plain and easy cheese souffle

¼ | cup | Butter or margarine |
¼ | cup | All purpose flour |
½ | teaspoon | Salt |

1 | cup | Milk |
8 | ounces | SHARP cheddar cheese , grated, |
4 | eaches | Egg whites |
4 | eaches | Egg yolks |
Directions
In saucepan, melt butter, blend in flour, salt and cayenne. Add milk all at once. Cook and stir until thickened and bubbly. Remove from heat, stir in cheese until melted. Beat egg whites till stiff peaks form. Set aside. In small bowl beat egg yolks till thick and lemon coloured, about 5 minuts. SLOWLY add the cheese mixture, stirring constantly. Cool slightly. Gradually pour yolk mixture over beaten egg whites, FOLD together well. Turn into an UNGREASED 1½ qt.
souffle dish or casserole. Bake at 300F till knife inserted off center comes out clean. About 1 ¼ hours. Serve immediately. Makes 4 serving. This served with a salad and crusty buns, makes a wonderful meal.
