Peach and mango chicken

| ¼ | cup | Butter |
| 1 | cup | Diced mango |
| ½ | cup | Diced peaches |
| 3 | Strips lemon rind | |
| 1¼ | cup | CHICKEN STOCK |
| 1 | tablespoon | Lemon juice |
| ½ | cup | Heavy cream |
| Salt & pepper | ||
Directions
Preheat oven to 350. Fry chicken in butter until brown on all sides.
Add mango, peaches, rind & stock. Cover & bake 1 hour. Remove chicken from pan & keep warm. Remove rind. Add juice & cream. Season to taste. Bring sauce to simmer & reduce until thick. Pour over chicken & serve.
