Pasta with garlic and anchovy

Yield: 1 Servings

Measure Ingredient
4 ounces Anchovies; (up to 6)
1 tablespoon Crushed garlic
1 pounds Kalamata olives; pitted
8 Basil leaves
½ cup Chopped parsley
½ pounds Butter
¼ cup Olive oil
Capers; (optional)
½ pounds Smoked ricotta

1. Process the olives into a paste 2. Cook the garlic in the olive oil just until it begins to smell.

3 Add the chopped anchovies and cook over very low heat until it melts 4. Add the basil, cook 1 minute 5. Add the olive paste and stir 30 seconds 6. Stir in the butter

7. Add the chopped parsley

8. Stir in the grated cheese
