2 cups All purpose flour
1 tablespoon Baking powder
4 tablespoons Granulated sugar
2 tablespoons Shortening
1 cup Cream
1 Egg
3 cups Any fresh or frozen fruits, such as cherries, halved plums, apple slices, apricots or rhubarb
¾ cup Granulated sugar
¾ cup All purpose flour
½ teaspoon Baking powder
2 tablespoons Butter

CRUMB TOPPING

Sift together flour, baking powder and sugar; add shortening, mixing well with fingers until fine crumbs form. Add the cream and the egg, mixing well. Pat dough out on a greased cookie sheet, pushing up sides. Top with a layer of desired fruit. To prepare crumb topping, mix together sugar, flour and baking powder. Rub in butter and enough cream to make coarse crumbs. Note: If using rhubarb, gooseberries, or other similarly tart fruit, add extra sugar as desired. Speinkle crumbs over fruit and bake in 375 F8F oven for 25 - 30 minutes. Cut in squares and serve.
