Nut and mushroom salad

Yield: 6 servings

Measure Ingredient
175 grams Button mushrooms; halved (6oz)
3 \N Sticks celery; sliced
1 small Red pepper; diced
75 grams Cashew nuts; (3oz)
75 grams Seedless grapes; halved (3oz)
1 \N Green apple; diced
4 tablespoons Mayonnaise
1 tablespoon Lemon juice
\N \N Salt and freshly ground black pepper
1 tablespoon Freshly chopped parsley or mint

Place the mushrooms, celery, pepper, nuts, grapes and apple in a bowl and mix with the mayonnaise, lemon juice and seasoning to taste.

Transfer to a serving bowl and sprinkle with freshly chopped parsley or mint.
