Nuoc cham (vietnamese multi-purpose sauce)

Measure Ingredient
2 eaches Cloves garlic
1 each Fresh hot chili pepper finely chopped
4 tablespoons White sugar
2 tablespoons Fish sauce
5 tablespoons Water
1 tablespoon Lemon juice

Combine ingredients in a clean jar. Mix until sugar is dissolved. This sauce will keep in the refrigerator for about a month or so. Good sprinkled as a condiment on fish, chicken, pork or as a dipping sauce for lumpia, eggrolls, wonton, etc. I've also used this as a dressing for a basil, mint and beansprout salad.
