New year's black-eyed peas

Measure Ingredient
1 pounds Dried black-eyed peas
\N \N Rinsed and picked over
1 \N Onion(s), chopped
1 can (14oz) stewed
\N \N Tomatoes with juices
½ cup Molasses
6 \N Sun-dried tomatoes
\N \N (not oil-packed), chopped
2 teaspoons Salt or to taste
\N \N Black pepper to taste

In a large bowl, cover the peas with cold water; let soak overnight.

Drain and rinse the peas; place in a large pot and add onions, stewed tomatoes, molasses, sun-dried tomatoes, and 2 cups water. Bring to a boil. Reduce heat to low, cover and simmer until the peas are very tender and the sauce is thick, 2½-3 hours. Add more water as needed. Season with salt and pepper and serve.
