Ingredients

2cupsCooked rice
½cupCooked potato, cubed
½cupFried beancurd, cubed
½Onion, sliced
1tablespoonDried shrimp, ground
½tablespoonBlachan
1cupBean shoots
1Spring onion, chopped
A little shredded lettuce
1tablespoonFried shallots

Directions

Heat oil and lightly scramble egg, then add rice, potato, beancurd and onion.

Stir fry over high heat for a minute or two, then add shrimp and blachan. Keep stirring.

Toss in bean shoots and spring onion, and stir fry for a few minutes. Keep frying over high heat until rice feels dry but clingy.

Serve sprinkled with lettuce and shallots.
