Measure Ingredient
2 tablespoons Vegetable oil
1 \N Egg
2 cups Cooked rice
½ cup Cooked potato, cubed
½ cup Fried beancurd, cubed
½ \N Onion, sliced
1 tablespoon Dried shrimp, ground
½ tablespoon Blachan
1 cup Bean shoots
1 \N Spring onion, chopped
\N \N A little shredded lettuce
1 tablespoon Fried shallots

Heat oil and lightly scramble egg, then add rice, potato, beancurd and onion.

Stir fry over high heat for a minute or two, then add shrimp and blachan. Keep stirring.

Toss in bean shoots and spring onion, and stir fry for a few minutes. Keep frying over high heat until rice feels dry but clingy.

Serve sprinkled with lettuce and shallots.
