Morrocan chicken with couscous

1 | Red onion; finely sliced | |
1 | Clove garlic; crushed | |
1 | 500 gram pac chicken mince | |
2 | teaspoons | Ground cinnamon |
1 | teaspoon | Ground coriander |
1 | 500 gram pac fresh plum tomatoes; roughly chopped or | |
; 400g can chopped | ||
; tomatoes | ||
150 | grams | Ready to eat dried apricots; (5oz) |
1 | tablespoon | Tomato puree |
Salt and freshly ground black pepper |
Directions
Heat the oil in a large saucepan, add the onion and garlic and cook for 3-4 minutes.
Add the chicken to the onions and cook stirring occasionally for 10 minutes, then add the cinnamon, apricots, coriander, tomatoes and tomato puree. Cover the pan and cook for a further 15 minutes.
Season to taste and serve.
Notes Delicious served with steamed buttered couscous and whole green beans.
