Morrocan chicken with couscous

Ingredients

1 tablespoon Olive oil
1 Red onion; finely sliced
1 Clove garlic; crushed
1 500 gram pac chicken mince
2 teaspoons Ground cinnamon
1 teaspoon Ground coriander
1 500 gram pac fresh plum tomatoes; roughly chopped or
; 400g can chopped
; tomatoes
150 grams Ready to eat dried apricots; (5oz)
1 tablespoon Tomato puree
Salt and freshly ground black pepper

Directions

Heat the oil in a large saucepan, add the onion and garlic and cook for 3-4 minutes.

Add the chicken to the onions and cook stirring occasionally for 10 minutes, then add the cinnamon, apricots, coriander, tomatoes and tomato puree. Cover the pan and cook for a further 15 minutes.

Season to taste and serve.

Notes Delicious served with steamed buttered couscous and whole green beans.
