Minestrone alla milanese soup

Yield: 6 Servings

Measure Ingredient
2 ounces Pork back or bacon
1 \N Onion chopped
4 \N Stalks celery chopped
2 mediums Potatoes -- diced
1 tablespoon Parsley chopped
1 large Carrot diced
4 ounces Canned white beans
4 ounces Marrow, veal if poss --
\N \N Diced
2 larges Tomatoes diced
4 ounces Cooked rice or barley
2 tablespoons Grated parmesan
6 cups Stock or consomme
2 ounces Butter
1 \N Salt & pepper

Saute bacon, onion, celery & carrot over moderate heat without browning for 10 min. Stir occasionally. Add beans, potatoes, marrow and stock. (If you want to substitute barley for the rice, add it now.) Simmer covered for 1½ hrs. Add tomatoes and rice (if you didn't use barley). Season and simmer for another 20 minutes. Just berfore serving, add parmesan & parsley. Serve w/addl. cheese at the table.
