4 \N | Stalks celery chopped |
2 mediums | Potatoes -- diced |
1 tablespoon | Parsley chopped |
1 large | Carrot diced |
4 ounces | Canned white beans |
4 ounces | Marrow, veal if poss -- |

2 larges | Tomatoes diced |
4 ounces | Cooked rice or barley |
2 tablespoons | Grated parmesan |
6 cups | Stock or consomme |
2 ounces | Butter |
1 \N | Salt & pepper |
Saute bacon, onion, celery & carrot over moderate heat without browning for 10 min. Stir occasionally. Add beans, potatoes, marrow and stock. (If you want to substitute barley for the rice, add it now.) Simmer covered for 1½ hrs. Add tomatoes and rice (if you didn't use barley). Season and simmer for another 20 minutes. Just berfore serving, add parmesan & parsley. Serve w/addl. cheese at the table.
