Minestrone alla milanese soup

1Onion chopped
4Stalks celery chopped
2mediumsPotatoes -- diced

1largeCarrot diced
4ouncesCanned white beans
4ouncesMarrow, veal if poss --
Diced
2largesTomatoes diced
4ouncesCooked rice or barley
2tablespoonsGrated parmesan
6cupsStock or consomme
2ouncesButter
1Salt & pepper

Directions

Saute bacon, onion, celery & carrot over moderate heat without browning for 10 min. Stir occasionally. Add beans, potatoes, marrow and stock. (If you want to substitute barley for the rice, add it now.) Simmer covered for 1½ hrs. Add tomatoes and rice (if you didn't use barley). Season and simmer for another 20 minutes. Just berfore serving, add parmesan & parsley. Serve w/addl. cheese at the table.
