Mexican fried rice

Yield: 6 servings

Measure Ingredient
3 tablespoons Vegetable oil
1 cup Long-grain rice
1 pack Frozen rak shrimp, shelled and deveined (opt; 8 oz)
1 cup Salsa
½ cup Chopped green bell pepper
1 small Onion, chopped
1 Garlic clove, minced

Heat oil in large skillet over medium heat. Add rice; cook until golden brown, stirring frequently. Stir in shrimp, salsa, bell pepper, onion, garlic and 3 cups water. Bring mixture to a boil; reduce heat to low. Cover; simmer 15-20 minutes or until rice is tender. Season to taste; serve with additional salsa, if desired.
