Mediterranean lemon chicken

4Chicken breasts or legs; (to 6)

Directions

1. Preheat oven to 425G. Grate peel from half the lemon into 9"x13" baking dish. Squeeze out juice and add 1/4cup to peel with oregano, garlic, oil and seasonings. Stir until mixed.

2. Coat chicken with lemon mixture. Arrange bone-side up in dish. Lay a piece of foil loosely over top. Bake in centre of oven for 20 mins. Turn chicken and baste. Reduce heat to 400F and continue baking, uncovered, basting every 10 mins, for about another 30 mins. Serve with pan juices.
