Marinated potato and mushroom salad

Ingredients

| ⅓ | cup | Vegetable oil |
| ¼ | cup | Lemon juice |
| 1½ | teaspoon | Dijon mustard |
| 1 | teaspoon | Sugar |
| 1 | teaspoon | Chicken bouillon granules |
| 1½ | pounds | New potatoes; cooked and cubed |
| 1 | cup | Fresh mushrooms |
| ⅓ | cup | Celery; chopped |
| ¼ | cup | Green onion; chopped |
Directions
1. In large shallow dish combine oil, lemon juice, sugar, bouillon, and mix well.
2. Add potatoes, mushrooms, celery and green onions.
3. Cover and marinate 3 hours or overnight stirring occasionally.
