Marinated potato and mushroom salad

Ingredients

cupVegetable oil
¼cupLemon juice
teaspoonDijon mustard
1teaspoonSugar
1teaspoonChicken bouillon granules
poundsNew potatoes; cooked and cubed
1cupFresh mushrooms
cupCelery; chopped
¼cupGreen onion; chopped

Directions

1. In large shallow dish combine oil, lemon juice, sugar, bouillon, and mix well.

2. Add potatoes, mushrooms, celery and green onions.

3. Cover and marinate 3 hours or overnight stirring occasionally.
