Marinated black-eyed peas (atlas)

Ingredients

| 2 | cups | Cooked black-eyed peas |
| 1 | medium | Red bell pepper, cut into 1\" strips |
| 2 | Minced scallions | |
| 3 | tablespoons | Minced fresh parsley |
| 3 | tablespoons | Olive oil |
| Juice of 1 lemon | ||
| 1 | Garlic clove, crushed | |
| Salt & pepper | ||
| Dark green lettuce leaves | ||
Directions
Combine all the ingredients except the lettuce in a mixing bowl.
Cover & let stand in the fridge for an hour or so. Stir occasionally.
Before serving, remove garlic. Line a shallow serving bowl with lettuce leaves & top with the pea mixture.
This recipe is better if prepared a day ahead. For real good luck, drop some coins into it before serving.
