Marg's cucumber soup

Yield: 6 Servings

Measure Ingredient
2 tablespoons Butter
1 medium Onion, diced
1 \N English cucumber, diced
3 cups Chicken broth
2 cups Plain yogurt
\N \N Salt & pepper to taste
¼ cup Fresh mint, chopped

Saut‚ onion until golden. Stir in cucumber and cook 2 minutes. Add chicken broth and cook covered for 15 minutes. Cool slightly and pur‚e in a blender. Chill. Stir in yogurt, mint, and salt & pepper.
