Maque chou with pork

Yield: 8 servings

Measure Ingredient
½ cup Oil
1 cup Chopped onion
½ cup Chopped bell pepper
1 cup Chopped fresh parsley
3 cups Fresh or canned kernel corn
2 tablespoons Chopped garlic
1 cup Chicken stock
1 cup Water
1 tablespoon Soy sauce
2 pounds Pork-cut 1\"cubes
\N \N Louisiana hot sauce to taste
\N \N Salt to taste

Over med . heat in large skillet, heat the oil and then saute the onions, bell pepper, and parsley until the onions are clear. Add corn and stir, then the garlic, stock and water and seasonings and stir again. Reduce the heat to low, cover and simmer for 30 min., then add the pork, cover and let simmer another hour, stirring occasionally.
