| Cut into bite-size pieces | ||
| 4 | tablespoons | Vegetable oil -- divided |

| Thinly sliced into rings | ||
| 1 | medium | Green pepper -- cut in 1\" |

| 1 | cup | Beef broth |
| 2 | tablespoons | Soy sauce |
| 1 | tablespoon | Cornstarch |
| Cooked rice or noodles | ||
Directions
In a bowl, combine flour, salt and pepper. Add liver; toss to coat.
Heat 2 tablespoons oil in a large skillet. Add onion and peppers: cook until crisp-tender. Remove from pan: set aside. Add remaining oil to the skillet. Cook and stir liver for 5-7 minutes or until no pink remains. In a small bowl, combine beef broth, soy sauce and cornstarch; stir into liver. Cook and stir constantly until sauce thickens.
