Limed snapper

Measure Ingredient
⅓ cup Chopped scallions
2 tablespoons Butter
2 \N Chopped ripe tomatoes
3 tablespoons Fresh lime juice
2 tablespoons Chopped green chiles
1 tablespoon Chopped parsley
⅛ teaspoon Salt
⅛ teaspoon Garlic salt
\N \N White pepper
1 pounds Red snapper fillets
\N \N Lime wedges

Saute' scallions in butter until tender. Add remaining ingredients except snapper & lime wedges; bring to boil. Reduce heat & simmer 10 minutes. Put snapper in sauce; spoon over fish. Cover & simmer 10 minutes longer. Serve on heated platter surrounded by lime wedges.

May also be served with a bed of brown rice.
