2 bunches | Fresh asparagus -- cut into |

2 tablespoons | Cooking oil |
24 larges | Shrimp; cleaned -- and |

2 teaspoons | Fresh ginger -- chopped |
2 tablespoons | Soy sauce |
1 teaspoon | Sugar |
1 teaspoon | Sherry |
⅛ teaspoon | Salt |
Add the asparagus pieces to the water. Bring to a boil and continue to cook for 3 minutes. Drain and save 2 Tbs. of the cooking liquid. Heat the cooking oil in a heavy skillet. Add shrimp pieces and cook until the color changes..about 5 minutes. Add the asparagus, ginger, soy sauce, sugar, sherry and salt. Finally, stir in the 2 Tbs. asparagus water and continue to cook for 5 minutes.
