Jamaican jerk

Measure Ingredient
1 \N Onion; chopped
½ cup Scallion; chopped
1 teaspoon Salt
4 teaspoons Jamaican pimento (allspice)
1 teaspoon Nutmeg
1 teaspoon Cinnamon
4 \N Habañero peppers; preferred, else Jalapeño
1 teaspoon Black pepper
4 \N Garlic cloves
2 tablespoons Grated ginger
2 tablespoons Lime juice
¼ cup Olive oil
½ cup Red wine vinegar

Place all ingredients in a food processor fitted with a metal blade.

Process at high speed for 10 to 15 seconds. Store in a non-reactive container; this is very corrosive to metals!
