Italian sausages (medium hot)

Measure Ingredient
2½ tablespoon Salt
1 cup Ice cold water
½ tablespoon Fennel seeds
1 teaspoon Black pepper
½ tablespoon Sugar
1½ teaspoon Crushed dried hot peppers
½ teaspoon Caraway seeds
½ tablespoon Coriander seeds
5 pounds Pork meat (not too lean)

Ground the pork meat. Combine all the spices, using a coffee grinder to crush the seeds. Mix all ingrendients. Put into small hog casing.

Cook on a hot grill.
