Indonesian tofu with peanut butter

Yield: 4 Servings

Measure Ingredient
10½ ounce Tofu; lowfat, firm
¼ cup Peanut butter; reduced fat, creamy
¼ cup Water
2 tablespoons Soy sauce
2 teaspoons Lemon juice
2 teaspoons Honey
¼ teaspoon Garlic
¼ teaspoon Ginger
⅛ teaspoon Pepper
1 tablespoon Onion; grated
4 cups Cooked rice

In small bowl, combine ingred. except tofu and mix with a whisk. Slice tofu into ½ inch slices. Cover with marinate. Place in foodsaver container and marinate for 30 min.

Remove from refrig. and let it stand at room temp for 30 minutes. Preheat oven 350. Place tofu in a single layer on baking sheet and cover with marinate. Bake uncovered 15 minute, then place under broiler until brown.

Serve over rice.
