Individual summer puddings

7 | cups | Fresh berries (raspberries, blackberries,blueberries) |
⅓ | cup | Granulated sugar |
1 | tablespoon | Lemon juice |
12 | Soft ladyfingers |
Directions
Reserve 1 cup berries for garnish. In nonaluminum saucepan, combine remaining berries, sugar and lemon juice; cover and cook over medium-low heat, stirring occasionally, for 7 to 10 minutes or until softened and juicy but not mushy.
Cut each ladyfinger into thirds; place 2 pieces in each of six ¾ cup stemmed glasses. Spoon scant ¼ cup fruit mixture over top. Repeat layers twice, pressing with back of spoon.
Cover and refrigerate for at least 2 hours or up to 1 day. Let stand at room temperature for 1 hour before serving. Garnish with reserved berries. Makes 6 servings. Typed in MMFormat by cjhartlin@...
