Indian lentil soup

Ingredients

1tablespoonOlive Oil
5cupsWater
1cupLentils; Red
1cupOnions; Chopped
½cupCelery; Sliced Thin
1cupCarrot; Diced
tablespoonTomato Paste
1Bay Leaf
teaspoonChili Powder
1tablespoonSalt
½cupParsley; Chopped

Directions

Put first 7 ingredients in pot. Bring to a boil then add next 4 ingredients and continue simmering till lentils are soft. Approx. 2 hrs. Just before serving add the chopped parsley.
