Hot smoked portabello pizza with goat cheese and green sauc

Ingredients

4Portabello mushrooms, stems removed
2tablespoonsOlive oil
Salt and pepper to taste
¼cupBaby spinach
¼cupBasil
1teaspoonTarragon leaves
1teaspoonBalsamic vinegar
1teaspoonCapers
2Garlic cloves, roasted
2tablespoonsExtra virgin olive oil
8ouncesCoach farms goat cheese, sliced thin

Directions

GREEN SAUCE

Prepare smoker. Rub mushrooms with olive oil and season with salt and pepper. Hot smoke for 10 minutes. Puree all sauce ingredients. Spoon over mushrooms. Add slices of cheese, a little more sauce and smoke for 5 more minutes.

Yield: 4 servings
