Horseradish-crusted rockfish

Yield: 4 Servings

Measure Ingredient
4 Rockfish fillet
½ cup Mayonnaise
2 tablespoons Horseradish
1 tablespoon Bread crumbs
½ teaspoon Minced garlic
1 Anchovy fillets; optional
1 pinch White pepper
Flour; to coat

Blend mayonnaise, horseradish, bread crumbs, garlic, anchovy and pepper in a food processor. Dredge rockfish in flour then coat with horseradish mixture. Bake in 350 degree oven for 9 to 12 minutes until fish flakes easily with a fork. Serve with Dill-Dijon Butter.
