|2 tablespoons||Fresh ginger root|
|2 \N||Lemon rinds|
|4 tablespoons||Honey, to taste|
|1 cup||Boiling water|

Put the ginger and lemon rinds in a small bowl with the honey.
Pour in 1 cup boiling water (or just enough to cover). Let steep for five minutes.
Strain and chill. When ready to serve, add the seltzer water.
Makes 4 servings (10 ounces each).
