Gumbo vegan

Yield: 4 servings

Measure Ingredient
1 medium Onion; chopped
1 medium Green pepper; diced
1 Stalk celery; chopped
2 cups Okra; sliced (fresh or frozen)
Salt and pepper to taste
1 can Italian-flavored crushed tomatoes
1 teaspoon Garlic powder
dash Tabasco sauce
1 cup Whole kernel corn, fresh or frozen

Saute onion, green pepper and celery in a small amount of water until soft. Add remaining ingredients and bring to a boil. Simmer for 10 minutes and serve. May be served over rice for a main dish.
