Glen's chicken and dumplings (a la glen)

Ingredients

1Whole broiler/fryer
1gallonWater
1mediumOnion; chopped
1cupDiced carrots
tablespoonBetter that Bouillon, chicken flavored
¼cupChopped fresh parsley
1teaspoonCrushed bay leaves
tablespoonCrushed thyme
Kosher salt, to taste
Black pepper, to taste
10Whole black peppercorns

Directions

Cut chicken into pieces. Place chicken in large pot. Add water and bring to a boil. Lower heat and simmer for 10 minutes. Skim floating scum.

Add remaining ingredients. Keep simmering. Simmer until chicken is ready to fall from the bones. Remove chicken. Add all vegetables, seasoning and bouillon. Debone chicken and tear into small pieces or dice. Return chicken to pot.

Simmer 30 minutes. Meanwhile, prepare your favorite dumpling recipe. Add dumplings and simmer 30 more minutes, or according to dumpling recipe.
