|¼ cup||Chopped shallots|
|½ cup||Dry white wine|
|½ cup||White wine vinegar|
|1 tablespoon||Grated fresh ginger|
|1 \N||Stick Butter; chilled, and|
|\N \N||Cut into 8 pieces|
|\N \N||Salt; to taste|
|\N \N||Freshly-ground black pepper; to taste|
In a saucepan combine shallots, wine, vinegar and ginger and bring to a boil. Reduce heat and simmer until liquid is reduced to a syrup. Swirl chilled butter into syrup one piece at a time. Adjust seasoning with salt and pepper. Serve immediately. This recipe yields ½ cup.
